Eats: Turkey Scramble

Every year my place of employment gives out a turkey to each of their employees, and my family always ends up with two because I work with my dad. I had fully planned on cooking my own turkey this year only to realize that I do not own a roasting pan. So I just did what I do every year, give it to my mom to cook for me. In the end, Kyle and I get an entire turkey to ourselves. There are only so many turkey sandwiches a person can eat before they get tres boring, so we try to be innovative with our leftovers.

Saturday morning, we both awoke with a great idea: Turkey + Eggs. I normally try not to eat too many eggs because they upset my stomach but I could not resist the temptation.

What you'll need:

-Cooked Turkey
-5-6 eegs
-1/2 small onion
-1 Green pepper
-Black pepper
-Cayenne pepper
-Pepper Jack Cheese

Chop the onion, turkey and pepper and heat in a skillet. Scramble the eggs with some milk and add to a separate pan. When eggs are finished, add the turkey, onion and peppers. Season to taste.

I sprinkled a little cheese on-top and Kyle toasted up some rye bread with coconut butter and it was delicious.

Oh and hot sauce. Seriously, I think almost everything I post on here is spicy! I hope to have a few more Turkey left-over posts coming up so stay tuned.

Shepherd Park

I have mentioned before that Oak Park has a lot of little parks in it and a few Saturday's ago, Kyle and I stopped at our favorite one in our new city: Shepherd Park. Oak Park is right on the border of Ferndale where we both grew up, so it's no surprise that we both have been to this park a million times. Kyle always called it "Oak Park Park" and I always called it "The train park", on account of the giant trains and trucks that are available for kids to climb all over. Or for the local fashion blogger to stage a mini excursion with her significant other, in our case.

As you all can tell by the photos, the park has not changed much, or at all since we were kids. The same giant tires are there, just with a fresh coat of bright paint every few years. There is also a giant hill in the park where we both went as kids to go sledding in the winter and I cannot wait to take my little brother Liam this year. I even have sleds stashed at my parents house from a few years ago because I could not fit them anywhere in our old apartment. The park also holds two baseball fields, a  tennis court and a nature walk, which will be great for more walks & photos come winter and spring.

I know you are all probably so sick of hearing about school, but I am reading "One flew over the cuckoo's nest" and it is amazing. I am about half-way through and I am excited to rent the movie while on break. My paper on the other hand, well, it has become the bane of my existence, but I will prevail. 

In the meantime, Kyle and I have been cooking up all of the left-over turkey and putting up Christmas decorations! We are getting a real tree this year, and I am kind of freaked out about it. I did promise Kyle that we could get a real tree once we got a house so I have to live up to my word. I am making him keep our old one though for the basement, that thing is older than me! My parents had it back in the day when we lived in a trailer park, many moons ago. Well, here's to new and old traditions this year!

Eats: Pumpkin Pie

Remember in my last post when I mentioned that I had a paper that I was supposed to be working on? That paper is worth 90% of my final grade in my Shakespeare Seminar course. Did I work on my annotated biography all weekend like I had planned? Nope. Come Sunday, I was getting so frustrated with it, that I decided to clean the entire house and make a pie. The house still smells lemon-fresh, and the pie came out okay for my first attempt. However, my domesticity quota has been filled for the month and this paper must be written. In the meantime, pumpkin pie!

What you'll need:

-Pie pumpkin (2 cups)
-Pie crust (unless you want to just make one)
-2 eggs
-3 or 4 cups brown sugar
-1/2 tsp. salt
-1/4 tsp. all spice
-1/2 tsp. cinnamon
-1/4 tsp. cloves
-1-1/2 cups milk

* I used Silk Vanilla and flax seed in mine.
First you will need to cut up the pumpkin, scoop out the guts and bake it at 350 for about 15-20 minutes. Poke it with a fork to test how soft it is. After it cools off, pull off the outside skin and chop the pumpkin into smaller bits. I then put the pumpkin in the blender with the Silk until it was all liquefied. Next put everything in a bowl and beat the eggs until everything is nice and smooth. Place pie crust on a pie pan, pour in mix and bake at 425 for ten minutes, then lower to 350 and cook until finished. You can poke with a fork and if it comes out clean, then it is finished.

As you can see, I did not use a pie pan because I do not own one. I used cake pans, and they are not the same by any means. My pie also came out pretty dark, I think I am going to use less brown sugar next time. Kyle bought cinnamon flavored whip cream at the store to go with it and it was really good.

I am in no way a party-planner, but this one worked out great for once! Saturday night, we went back to a time when Green Day was still good, when flannel went with every outfit, Gushers were considered a fruit, Doc Martins ruled the world, everyone was pissed when Mufasa died, Boy bands never played any instruments, Daria and Clarissa were every girl's best friend, guys wanted to be Beavis and Butthead, Pinkerton was misunderstood, everyone liked to jump around, Doritoes were limited to Cooler Ranch and Nacho Cheesier, and teal was all the rage.

Everyone dressed 90's and my friend Chris made a playlist of over 7 hours of 90's jams. I bought all kinds of snacks from that decade, including capri suns. I tried to take outfit pics of everyone, but ended up setting my camera down and forgetting about it. I stole some pics from my new friend Char who got some great ones :)

As you can see, some of my friends came in character! You get a gold star if you can figure out who they are supposed to be! Most people ended up in flannel or a T-shirt from that decade. Jamie ended up hemming a dress that I thrifted over the summer that was really 90's and I just threw on my Doc's and was good to go! 

We danced, played beer-pong, jammed out to Backstreet boys, performed the Circle of Life. You know, normal 90's stuff.

The irony in the above photo? Alf ate cats! I ended up crashing around 4:30am with Louie (who photo-bombed quite a few pics if you look close enough), while some people stayed up until 8am. I tried to make vodka gummi bears but I didn't prep them in time, and people just ate them anyway.

As you can see, we had a blast! I keep laughing at all the pictures and the things people kept saying. I might actually have everyone over again for an Ugly Sweater Party next month, but not such a huge party. I can say for sure that this was a much needed break and it was awesome to have new friends meet some old friends. Themed parties are awesome.
